A meat roast is synonymous with togetherness, fun, and laughter. A carnita asada is enjoyed, new friends are made, business is done, problems are solved, and it is even the beginning of many relationships. Oh no! The meat doesn’t need an excuse to get together.
Is carnita asada going to happen or not? For those from the north of Mexico, the answer is always: it has already been made.
In northern Mexico the way they enjoy one or more types of roasted meat is in a decade; a mixture of grilled meats accompanied by white or purple onions, green, red, or yellow peppers, serrano or jalapeño peppers, and tomatoes, served in corn tortillas to enjoy in a taco.
As well as the traditional cuts of meat straight from the grill, it is usually accompanied by different sauces, types of guacamoles, beans, and some even pico de gallo. On the other hand, in the south, it is customary to grill more arrachera, ribs, steaks, sausages for grilling, chorizo chops, and onions.
In the United States it is very common American barbecue, which is characterized by its delicious barbecue sauce or BBQ that is accompanied by some roasted corn in Argentina that for them an asado, it is indispensable the fire in the coal and the embers, an Argentinean asado usually takes asado de tira, bife de chorizo, matambre, chicken, chorizos and morcillas and are accompanied in a style of salad. In Brazil, we enjoy an exquisite Brazilian churrasco, which is the name given to American barbecue meat.
Yes, we know that right now we are going through a difficult situation where we have to stay at home without the possibility of eating at La Vicenta or organizing a carnita asada in some spot among friends.
Soon we will be able to go out and enjoy a roasted meat/BBQ/asado/churrasco in the company of our friends and family!
