Legend has it that in 1821, after the Independence of Mexico was achieved, General Agustín de Iturbide visited the city of Puebla. In honor of his visit, the Augustinian nuns of the Convent of Santa Mónica decided to create a special dish that would combine the colors of the Mexican flag.
This creation brings together traditions, flavor, and our national colors in a recipe that has been preserved for centuries in the history of our country. Its preparation, filled with culture, sensations, and symbols, pays tribute to our ancestors and is a way to keep alive the culinary tradition of our country.
