Back in 1821, in the city of Puebla, a group of Augustinian nuns from the Santa Mónica Convent heard that Agustín de Iturbide would be passing through the city after signing the Treaties of Córdoba. And of course—they wanted to impress.

So, they created a dish inspired by the colors of the Mexican flag: green from the poblano pepper, white from the nogada sauce made with Castilla walnuts, and red from fresh pomegranate seeds. Every ingredient brings flavor, but also powerful symbolism tied to identity and national pride.
