Some tacos explain themselves, and some need an introduction. The Torito Gobernador is the second kind, and it is worth every word.
What is a taco gobernador?
It is a Sinaloa classic: a tortilla with shrimp and melted cheese. And in northern Mexico, a stuffed chile is called a “torito.” Our Torito Gobernador brings both ideas together in one taco.
What is in the Torito Gobernador?
Flour tortilla, shrimp-stuffed chile, gouda cheese, charro beans, red cabbage slaw, cream, chipotle mayo, cilantro and lime. Each order comes with three pieces, so you can try one and still want the other two.
Is it very spicy?
You will feel the chile and the chipotle mayo, but the cream and gouda keep them company. It is a taco with character, not a challenge.
What goes well with it?
- To start: Guacamole with pico de gallo, or an Aguachile New York if the table is in seafood mode.
- To drink: an Agua de Calzón, with Tequila Tradicional® Plata, xtabentún, cucumber juice, lime and citrus salt. If you prefer a classic, a Paloma never fails.
- To keep the tacos coming: Quesabirrias, Carne Asada al Carbón or Volcanes de Filete.
What kind of plan is it for?
A weekend lunch, the friend who does not eat beef, and anyone who always orders “something different.” It is also a great starter to share before the steak arrives.
House tip
Squeeze the lime right before the first bite and eat it with your hands. The flour tortilla holds everything inside.
Order it at La Vicenta Tezontle, in Parque Tezontle, Iztapalapa, Mexico City. Book on our website and follow us on social media. The chile is on the inside; the urge to order another round is too.
