We know people have strong opinions about *chile en nogada*, so we didn’t choose just one path: we offer the *capeado* version—classic, golden-fried, and wrapped in its own delicate batter—and the *sin capear* version—unadorned and direct, allowing the filling and the walnut sauce (*nogada*) to take center stage.
